Kelley's Banana Bread Recipe

Today, I’m sharing one of my favorite recipes with you all, my chocolate coconut banana bread! It’s so delicious, easy to make, and gluten free, so you won’t feel as guilty eating it! It’s the perfect treat when you’re craving something sweet.

  • Preheat your oven to 350 degrees. Combine your bananas, flax eggs, peanut butter, and coconut oil in a high powered blender or food processor and mix well.

  • Once all of your ingredients are blended, add in your coconut flour, almond flour, baking soda, baking powder, vanilla, and sea salt and mix well.

  • Crumble the chocolate bar up so that you can sprinkle it in the mix

  • Add in ⅓ cup of the toasted coconut & ⅓ cup of the chocolate chips and pulse once just to blend them in.

  • Pour the mixture into a loaf pan lined with parchment paper paper, then add remaining coconut and chocolate chips on top.

  • Bake for 60 minutes or until lightly browned and a fork or skewer inserted in the top comes out clean. Let it cool completely before slicing because it will keep cooking in the pan.
